We are looking for a F&B Director at an exciting time in Saga’s history. As a Group, Saga is taking to the seas in our brand new, luxury cruise ships and leading the market with innovative insurance and financial products.     

The Food & Beverage Director is responsible for the management of all our state-of-the-art shipboard food and beverage operations and outlets onboard to ensure high standards are maintained and achieved within budgetary limitations. 

The Food and Beverage Director works closely with the Executive Chef to ensure a memorable menu is available and the Public Rooms Manager to ensure a high-class beverage experience is delivered.

Role Responsibility

  • Oversees the operation of all food and beverage outlets and the galley area. 

  • Develops procedures and processes to maximize Guest satisfaction. 

  • Establish and develop a pro-active Food & Beverage team that deliver a cost effective and quality-oriented service product in line with the Saga Leadership Model. 

  • Monitor Work and Rest hours of all Food & Beverage staff ensuring MLC guidelines are adhered to. 

  • Carry out daily walk-throughs and inspections by meal period to ensure high standards are maintained and met. 

  • Daily interaction with Guests and provides outstanding customer service and delivery. 

  • Responsible for the implementation and execution of cleaning procedures in accordance with USPH standards. 

  • Ensures cleanliness, maintenance and presentation standards are kept to Saga Cruises principles in all Food & Beverage areas. 

  • Spends a large amount of time in front-of-house operations to set the example and oversee inspections. 

  • Reports to the Hotel General Manager any Guest complaints and feedback and where possible proactively resolves. 

  • Overall acceptance and control of goods delivered for the Food & Beverage department as well as correct storage. 

  • Responsible for the appearance and manner of the Food & Beverage crew. 

  • Overall responsibility for ensuring that outlets within the Food & Beverage department operate within established budgetary guidelines. 

  • Reviews and monitors all Food and Beverage related costs and consumptions in accordance with financial targets. 

  • Monitors and where necessary enforce HACCP procedures for sanitation and cleanliness in all food production areas. 

ADDITIONAL RESPONSIBILITIES: 

  • Prepare appraisals for individuals under their remit in accordance with policies. 
  • Attends passenger functions as required by Head of Department. 

  • Partake inspections, training and meetings as required by Head of Department. 

  • Ensures that the set standards are kept, and staff members work according to their respective job descriptions. 

  • Lead and motivate using the Saga Leadership Model. 

  • Ensure the ‘Saga Way’ is delivered each day. 

The Ideal Candidate

  • Previous experience as Food and Beverage Manager/Director onboard a Cruise ship or 4/5* hotel/resort. 

  • Excellent organizational skills and able to juggle several operations in one go. 

  • Demonstrated experience in motivating, leading, and engaging a diverse workforce to increase synergy and improve productivity. 

  • Passionate about people and able to handle guest complaints with a smile. 

  • All certificates as required by the STCW code for this position. 

  • Good command of the English Language.
